The Food and Beverage Committee consists of 12 resident members meeting monthly to discuss ways to improve food and food service at La Costa Glen. Carolyn Lawson chairs this Resident Council Standing Committee. At meetings, management attendees include Terri DeBoever, Acting Executive Director of LCG; James Hoevertsz, Director of Food Service; Paula Morse, Dining Services Director; Executive Chef Chris Russo; and Resident Council Liaison, Mahesh Podar. Connie Herbert, Administrative Assistant, takes minutes.
As you can see by the line-up of those in attendance at every meeting, food is taken seriously at La Costa Glen. Topics discussed at every meeting include the comment cards diners fill out. Every card is read prior to the meeting and a report is given for the previous month.
Industry trends are closely followed and discussed by committee members.
The new employee training program was recently discussed. It was explained that experienced staff train newcomers with an orientation, instruction in stations such as “Beverages” and “Entrees,” and new staff spend up to four days shadowing experienced servers.
The renovation of food service areas at Lakeside is an important current topic. The committee took a trip to one of our sister properties to see if ideas in place there could be used here.
While much is accomplished at monthly meetings, that’s not all the members do. They attend kitchen tours, act as “Mystery Diners,” participate in menu decisions, and host new resident dinners.
If you have an interest in serving on this committee, a three year commitment is required. Also, be prepared for a thorough application and interview process.
The Food and Beverage Committee serves to answer the most important question asked at LCG: “What’s for dinner?”
